Our journey to Lassen took us past Mt Shasta with a pit stop at the Subway Lava Caves (our first lava tubes) and through Grants Pass where I got to introduce Thomas to Catalyst Pizza (shockingly the best calzone I’ve found on the west coast.) We’re camped at Summit Lake and got a spot with an awesome lake view 😍 the first day I read for a better part of the day while Thomas worked, then went out and hiked to Cliff, Shadow and Terrace Lakes. Fancy ramen, mochi pancakes and salad from the garden are some of the many scrumptious things we ate.
